Apple Butter Crumb Bars
These bars are not too sweet, so are perfect with a cup of hot tea or coffee. The buttery crumb base and topping have a hint of spice which complements the smooth and rich apple butter filling.
Ingredients
- 1 7/8 cup all purpose flour or a mixture of all purpose and whole wheat
- 1 7/8 cup quick oats
- 3/4 cup granulated sugar or a mixture of granulated and brown sugars
- 3/4 tsp baking soda
- 3/8 tsp salt
- 1/2 tsp ground allspice or a mixture of ground allspice, nutmeg, and cloves
- 1 1/8 cups butter, melted (One cup plus 2 Tbsp.)
- 2 tsp vanilla extract
- 1 cup apple butter
Instructions
- Preheat oven to 350 degrees. Line a 9 x 13 inch baking pan with parchment paper.
- In a large bowl, combine the flour, oatmeal, sugar, soda, salt, and spices.
- Pour the melted butter over the dry ingredients. Add the vanilla. Mix well until uniform and crumbly.
- Reserve a rounded cup measure of the crumb mixture (unpacked). Press the remaining crumb mixture evenly into the bottom of a 9 x 13 inch baking pan lined with parchment paper.
- Spread the pressed crumb base with apple butter.
- Sprinkle the reserved crumb mixture evenly over the top. Do not press in.
- Bake in a preheated 350 degree oven for 30 – 35 minutes, or until edges are lightly browned.
